Do you feel the "beet"?
I am finding myself in love with beets! There color is so vibrant and you will feel like dancing after eating them! ! I am pretty certain that they used beets to color women's lips before we had lipstick. Stains my fingers every time.
I never really liked beets until a few years ago. Part of the reason I think could be because I only had them from a can. There is nothing like having a fresh roasted beet!
Now lets talk about all the nutrients you are giving your body when adding beets to your day.
Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate!
Now lets get to roasting them! Then you can keep them in the fridge for the week and add to salads, wraps, or even eat as is!
Preheat oven to 375 degrees
1. Cut the greens off and save for later
! There is no waste here!! These can can sauteed in evoo with some garlic and eaten just like you would spinach! So Yummy!
2. Place your beet on top of a foil sheet and add just a tad of Evoo or Coconut oil
3. Wrap up!
4. Place in oven for 45-60 minutes depending on the size of your beet
Viola you have it! Let them cool and then store in refrigerator for up to a week.
You can add to a salad with field greens, feta cheese, green apple slices for a yummy salad or even put in your morning smoothie for some extra fiber! Either way, you can't go wrong in adding these lovely veggies to your day!
